I needed something light and healthy for some wonderful ladies coming to my house today. This is what I came up with. When I started cooking often I really enjoied discovering the differences and similarities between recipes.

I had always wondered what the difference between an egg casserole, Fritatta and quiche. In an egg casserole I will put just a splash of milk on the eggs. In a Fritatta, you don't put any milk in. In a quiche there is more milk than eggs.


 

It is so hard to find a recipe for a peanut butter or chocolate smoothie without bananas! I hate bananas! They have this slimy stringy texture... Ew. So this is, like a lot of what I make, an inspiration of a few different Peanut Butter Oat Smoithies.


 

This is my go-to book for most anything. My mom's 198something edition of this cook book is well loved and mine has most of the same recipes! This is an adaptation of their oat muffin recipe.


 
I found a recipe for these one time and they were pretty awesome. Honestly you cant go wrong with Nutella. The only problem was that it said to spread Nutella between two prices of bread. The Nutella to bread ratio was a little off so I decided that this recipe needed to be beefed up a little. I was thinking about it one night while laying in bed (because how to prepare food is mostly what I think about) and it just kind of hit me to literally stuff a piece of bread with Neutella. It was kind of brilliant.

I wanted something different this morning. After perusing pintrest for a while I found a recipe for Ham and Cheese Enchiladas. I was inspired to make these similar breakfast enchiladas. This is the method that I learned from my mom, except instead of frying the tortillas I just warmed them through. Although, I was tempted to fry them in the pan of bacon fat that was sitting on the stove top! I liked how they turned out, although I will make more sauce next time.

 
I have made this for a long time. My housemate bought some dates to put in her smoothies as a natural sweetener so. I thought they sounded food in oatmeal. It was perfect because it was a good texture and a dark sweet flavor similar to brown sugar.

 

2 green apples
4 carrots
1 blood orange

Sweet and easy! I ended up juicing the orange with a citrus squeezer because I thought that would be faster than peeling it.

The first time I juiced I made orange juice. I put the whole orange in the juicer, not thinking about how the pith is bitter. It made my orange juice awful! So don't put citrus in a juicer!

 
Ok so the picture is kind of awful but it tasted fantastic! The secret to grits is to
1) use half milk half water. If you use all milk, it's too creamy. If you use all water, it is flavorless.
2) add the butter, salt, and pepper in the beginning so the grits soak them up instead of sitting on top.

This is the recipe on the package so if you want different portions follow the package proportions.

Basic Grits for 4
1 1/3c quick grits
2 2/3c water
2 2/3c milk
3T (or more) butter
2t salt, plus more to taste
1t pepper, plus more to taste

Add everything to a medium stew pot. Cook on med low heat for 10 min or so, until grits are thick. Stir occasionally. Add more salt and pepper to taste. Serve with sasuge and two over easy eggs!
 
I have missed strawberries so much! They are one of my favorite fruits! I was happy to see them on sale for Valentines day because they have been so expensive! I put this compote on so many things! Pancakes, biscuits, I keep extra in the fridge and use it like jam (which it essentially is, minus a few things).
