This is my go-to book for most anything. My mom's 198something edition of this cook book is well loved and mine has most of the same recipes! This is an adaptation of their oat muffin recipe.

Blackberry Oat Muffins

1 1/3 c flour

3/4 c rolled oats

1/4 c sugar

2 t baking powder

1/4 t salt

1 egg

3/4 c milk

1/4 c cooling oil

1 c blackberries (or other berry)

1 T flour

1 Streusel topping recipe

Line muffin tin with paper cups.

In a medium bowl combine oats, sugar, flower, powder and salt.

In another bowl combine eggs, milk and oil. Pour egg mixture into flour mixture and stir until moistened.

In a small bowl mix berries and flour. This will help keep the berries suspended in the batter. Gently fold in berries.

Spoon berries into muffin cups. Fill cups about 3/4 full. Chill in fridge. Mix streusel topping:

Combine 3 T flour, 3 T packed brown sugar, 1/4 t cinnamon. then cut in 1 1/2 T coconut oil OR 2 T butter. Sprinkle topping on muffins and put them back in the fridge.

Preheat oven to 400. When it is preheated put the chilled batter in the oven and bake for 15-20 minutes or until a toothpick comes out clean.
