So I forgot to make dinner for my husband who only had about an hour at home to eat. I made this in about 30 minutes and it was DELICIOUS!


 

Enchiladas is one of those foods that I crave! When I was pregnant one of the only CRAVINGS!!! I had was cheese enchiladas from Carettas. Chris and I were in class at UNO at the time so Metarie was completely out of the way from our drive from Gentilly to the Quarter. My sweet husband brought me anyway so I could have my cheese enchiladas. They were delicious!


 
I say Texas Chili because my people are from Texas and they kind of taught  me to make chili. I have heard rumors of my dad's famous chili that he made when he owned a drive through in west Texas. He said he forgot how to make it. So I was inspired by what dad remembered that he put in his chili and I looked up a ton of recipes and this is what I came up with.

 
I LOVE nachos. Well I love all things Mexican food because it is basically the same thing in different packaging. My favorite nachos are simple: beans and cheese. Today I topped mine with beans, cheese, shredded chicken; baked that in the oven at 350 for 10 minutes until the cheese melts. Then top them with lettuce, tomatoes, avocado and lime.
 
 
Despite the fact my sister avoided the kitchen at all costs when we were younger she has become a great cook. I think the main reason she hated cooking is because she had to share a kitchen with women who made a huge mess and then she would have to clean! Here are a few of her favorite recipes!

 
FINALLY I have figured out how to make cheesy rice with brown rice! This is one of those things that Nana makes often and I love. I have started to buy all whole grain bread, brown rice and so on and wanted to recreate this very 'Merican dish but healthier.

 
Despite what restaurants outside of south Louisiana serve, BBQ Shrimp is NOT shrimp with BBQ sauce! In its most basic form, BBQ Shrimp is whole shrimp sautéed in spices and butter. Emeild had a recipe on Food that sounded amazing (and time consuming) that I will have to try. Sometimes it is better to put a little more effort into your food! This is BBQ Shrimp the fast and easy way!

 
We have been shopping at the Holly Grove market some lately. I love all of the beautiful veggies! Most of this salad came from the market.
