So I forgot to make dinner for my husband who only had about an hour at home to eat. I made this in about 30 minutes and it was DELICIOUS!

Mexican Fish and Couscous

For 4

1/2 c couscous

1 T olive oil

1 c water

1 lb fish (I used red fish that my Papa caught)

3 T olive oil

1 lime

1/2 c frozen corn

1 med tomato diced

1 t Cumin

1 t chili powder

1/2 t red pepper flakes

Soak couscous in water for 5 minutes. Drizzle a little oil in a large skillet with a lid. Drain couscous and put on skillet. Warm until it starts to smell nutty. Add 1 c of water and stir. Put a lid on it and don't stir it again until it is done, 10 minutes or so. Put couscous in a large bowl and set to the side.

While that is cooking, warm corn in a small pot. Add corn and tomato to couscous. Juice 1/2 a lime over mixture and add Mexican seasonings or cumin, chili powder and toss together.

Sprinkle fish with Mexican seasoning mix or cumin, chili powder and salt. Heat oil in the same pan. Cook fish for about 2-3 minutes on each side.

Slice an avocado and put everything together on a plate!
