We have been shopping at the Holly Grove market some lately. I love all of the beautiful veggies! Most of this salad came from the market.
Hello Spring! Salad
Handful of baby spinach
Handful of mixed baby greens
1 avocado
3 small tomatoes or one medium tomato
1/2 c pecans
1/4 c feta
If the greens are bigger than bitesize, run a knife through them so they will be easy to eat. Lay the greens and spinach in a bowl and mix together.
Cut avocado in half and take out the pit. Peel the skin off and slice. Lay on top of the salad so it looks pretty. Dice tomatoes. Top with remaining ingredients.
Dressing
Equal parts balsamic vinegar and olive oil. I used about 1/4 c of each to get about 1/2 c.
1 T diced rosemary, fresh or dried
Add vinegar and rosemary to a bowl. Whisk it vigorously, and slowly add oil. Drizzle on top of the salad.
