Fish and Quinoa "Stir Fry"

1 lb fresh fish (red, cat, whatever)

Asian seasoning

1/2 c quinoa

1 c water

1 T soy sauce

Dash of fish sauce (optional)

2 c Frozen peas or Asian stir fry mix

Sprinkle fish with Asian seasong and set aside.

Rinse quinoa in cold water and put in a large skillet with a lid. On med heat sauté quinoa for a few minutes, until it smells nutty. Add water, bring to a boil. Put the lid on it and simmer for 7-8 minutes, you may have to turn the heat down. When it is done put in a large bowl.

Add veggies to skillet and sprinkle with Asian seasoning and soy sauce. After 3 min add fish to skillet and cover with the lid. Cook for 5-7 minutes, depending on how thick your fish is. Add everything to the bowl, breaking up the fish a little. Add soy sauce to taste. Enjoy!
