FINALLY I have figured out how to make cheesy rice with brown rice! This is one of those things that Nana makes often and I love. I have started to buy all whole grain bread, brown rice and so on and wanted to recreate this very 'Merican dish but healthier.


Pork chops and cheesy rice
For 4

2 T slap yo mama
2 T sugar
2 c boiling water
1 c ice
4 pork chops

To optionally brine chops, in a large bowl dissolve slap yo mama and sugar in boiling water and add ice. Stir until I've had melted. Add pork chops. Let brine for no more than 2 hours.

3 c water
1 c brown rice
1 T olive oil
1 T flour
1/2 c milk
1/2 c shredded cheese (I used Munster and it was yummy!)


Bring water to a boil. Add rice and stir once. Reduce heat and add a lid. Let cook until done, about 20 min. If you check the rice, don't stir it or it will become sticky. You can put a spoon in the middle and take out a few grains to try.

Meanwhile, heat oil in a small pot. Add flour and whisk until combined. Add milk and heat but do not boil. Add cheese and melt it. Add to cooked rice.
Preheat oven to 350. Put into a 9x9 pan and top with seasoned pork. Bake until pork is cooked through, about 15 minutes.
Or you can cook the pork chops in a pan with a little olive oil.
