Last year I made my son PBJ cupcakes because his favorite food is PBJ samich as he calls them. One of our friends liked it more than my son did and I've been promising to make them for him for months I think! He and his wife invited us over dinner so I made him this cake.


PBJ Cake
This is the yellow cake recipe from my always faithful Better Homes Cook Book (plus some instructions on how I make a cake)

3/4 c butter room temperature
3 eggs room temperature
2 1/2 c all-purpose flour
2 1/2 t baking powder
1/2 t salt
1 3/4 c sugar
1 1/2 t vanilla
1 1/4 c milk

Take a peice of parchment paper. Put a round 9" or 8" cake pan on top. Using a sharp knife, cut tge paper around the edge of the pan. Repeat for other pan. Butter the edge of the pan and coat in flour.
Preheat oven to 375.
In a bowl sift together flour, baking powder, and salt.
In a mixing bowl, beat butter with an electric mixer on high speed for 30 seconds. Gradually add sugar, beating until well combined. Beat two minutes more. Add eggs one at a time, beating well after each addition. Beat in vanilla. Alternately add flour and milk starting and ending with flour mixture. Mix each addition on low speed just until combined. Spread batter into pans. Bake for 20-25 minutes for 9" pans and 30-35 minutes for 8" pans. Bake until a toothpick comes out clean. Let cake cool for 10 minutes in pans. Let cool for 10 minutes on wire racks.

Peanut Butter Icing

18oz jar of smooth peanut butter
1/2 lb powdered sugar

Beat peanut butter with a whisk attachment if you have it for 30 seconds. Slowly add sugar until it is a good consistency.

Assemble cake while still warm. Put a little icing on searching pan and the first layer on top. Generously spread grape jelly on top. Add second layer and spread icing on cake. I added a little grape jelly to the top if the cake just to look pretty!
