My housemate made this yesterday for lunch and it was AMAZING! I love all things lemon and all things garlic so put the two together and I'm a happy girl!


Lemon Garlic Chicken Pasta

1 package cooked pasta, she used gluten free rice noodles
2 boneless skinless chicken breasts
Olive oil
Lemon pepper
1/2 c olive oil
6 cloves garlic minced
Zest and juice of 1 lemon
2 big handfuls of baby spinach

Cook the pasta according to direction on the package and drain. In a large skillet, drizzle a couple tablespoons of olive oil. Trim fat off chicken and season both sides with lemon pepper. Cook for 10 min on each side or until cooked through. Shread chicken and set aside. Add garlic, olive oil, juice and zest to skillet. Sauté until garlic is browned. Add spinach and sauté until spinach is wilted, about 7 minutes. Add pasta and chicken and warm through sturing with tongs often letting the garlic and lemon infused oil soak into the pasta. Serve hot!
