My gama makes a version of this and calls it gofuther (go further but it ends up being gofuther because of our Texas slur). It is usually leftover chicken and veggies and cream of something soup. Not my favorite thing in the world, mostly because of the cream of chicken soup. So this is my solution to leftover chicken, veggies and it is best with leftover rice but you can make some too.
One of my best friends, Karelle, taught me how to make authentic fried rice. She said that the color on the rice comes from cooking the precooked rice for a long time, essentially roasting it in a skillet. That was interesting because I thought it came from the soy sauce so my fried rice always turned out mushy.
This is one of those things I just make. Use the veggies that you have.

Leftover fryed rice for 2 or so
2T Olive oil
2 med Carrots diced
1 bell pepper
1/2 c diced onions
Squash
1 c leftover or cooked rice
A few splashes of soy sauce
Leftover veggies I like:
Corn
Peas
Green beans
Bean sprouts
Ect

Heat oil in a large skillet with a lid on medium heat. Add carrots, pepper and onions. Sauté with the lid on for 10 minutes stirring occationally. Add squash, stir and return lid. Cook for 5 minutes. Remove lid and add rice, soy sauce and other veggies. Let cook for 10 min sturing frequently. Add chicken and let cook for another 10 minutes sturing frequently. Done!
My husband made a yummy sweet and sour sauce that I put on top but I usually serve it plain.
