I know there are about 1,034 ways to make fish tacos but this is how I made them yesterday.


Fish Tacos
For 4

1 lb red fish
Juice from 1/4 of a lime
Grilled Fish seasonings

1 c Yogurt
Zest from 1 lime
Juice from 1/4 of a lime
1 t salt
2 T diced cilantro

1 avocado
Juice from 1/4 of a lime
1 t salt

Bell peppers finely diced
Limes slices
1 c thinly sliced cabbage
Corn tortillas

Zest the lime and cut into fourths.
Preheat oven to 400. On a cookie sheet with sides place a large peice of foil. Place fish on top and season with Grilled Fish Seasoning and lime juice. Fold foil around fish and seal to make a steamer pouch. Bake in the oven for 20 min.
While the fish is cooking get the toppings ready. For the sauce, mix yogurt, salt, lime zest and juice and cilantro in a small bowl. In a separate bowl, smash avocado with a fork and mix with lime and salt. Dice bell peppers and slice cabbage. Serve and let everyone assemble their tacos!
