After a little pinspiration, I came up with these. I was very impressed with how well they tuned out! They are everything you want in a bunch bar: sweet, healthy, chewy and moist.

Date and Oat Bars

10 oz package of pited dated

1 c water

1 1/2 c old fashioned oats

1 1/2 c all purp flour

1/2 c brown sugar

1 t baking soda

1/2 t salt

3/4 c coconut oil

1/2 c applesauce

Preheat oven to 350.

In a saucepan heat dates and water over medium heat. Let simmer for 5 minutes and turn the heat off. Blend in a food processor until mostly smooth.

On a large bowl mix oats, flour, sugar, soda and salt. Mix in oil and apple sauce.

Line a 9x13 pan with parchment paper. Press half of the oat mixture into the pan. Spread date mixture over it. Gently press the rest of the oat mixture on top of the dates.

Bake for 30 minutes or until browned. Let cool completely and cut into squares.
